Chase out the wall for the pipes and plaster over? Or are you planning on mounting it on a frame so the pipes are surface mounted rather than buried?

I agree. If you want it neat make a fookin big 'ole, put in structure that really supports it [wood plate/metal plate, according to your skill set] and cement the structure into the wall.
I cant remember how my similar fittings mounted, but I ended up tiling with some means of fitting them to the pipes afterwards.
