Does anyone know the best way to cover the expansion gaps that are cut around door frames as they are odd shapes which would make normal straight beading very difficult?

The neatest solution is "don't leave a gap!". The trick on a door frame is to cut away the bottom of the frame and slide the laminate under the frame so that the frame itself hides the gap.
