With one of these is it ok to have a tiled splashback or does cleaning the grout and everything make someone wish they'd gone for a stainless steel one?

I wouldn't if it's white grout, it will eventually stain.
What's the relevance of the presence of an extractor hood? Your query is just about what to do with the splashback area, right?

White grout will eventually stain but will take a long time especially if it has microban added.And it can be cleaned every so often. Otherwise there are alternatives such as epoxy resin grouts, or coloured grouts ie grey grout.
