Trying to get a couple of Seagate IronWolf drives for my new media server, Amazon will only allow me to buy one, says it's the maximum allowed for private buyers.

Interesting.
I has that problem with Scan - they would only sell one per customer, of an enterprise class NAS drive. Makes doing RAID a bit tricky, so I got two off Amazon instead. Same model, with free delivery, and a slightly lower price (that wasd a couple of months ago).
I think the AI data centres are gobbling them up.
Do the same as you do when they wont let you have ibuprofen gel and paracetamol together.
Go back in an hours time for the other one
I tried ordering two today for a customer's NAS - the web site claimed to only have one in stock. So now waiting on a back order.
