I am going to be changing my plastic kitchen sink for a metal one soon.
I have taken the dimensions of the sink down.
Is there anything else I should be aware of? Can I reuse the connecting bits to the waste?
I will be getting a new set of taps that are metal.
Is there anything else I should pick up whilst I am at it?

Just make sure that the outside edge of the new sink will definitely cover the entire hole left by the old sink.
Yes, although it can be a good time to replace them with nice new ones. Connecting up sink wastes is very easy.
Yes, if you have a "traditional" UK arrangement of cold mains water and gravity low pressure hot water, note that not all kitchen taps are suitable. You would need a tap specifically intended for mixed pressure operation. Trendy Italian, French and German taps are rarely compatible with such systems, particularly those with hoses, or slender dimensions.

But if SWMBO has selected such taps, you can up the pressure with a single impeller pump (it's cheaper than a divorce folks!)
