Great. The idea of a dirt floor for the kitchen is a good one, won't show spills and should even absorb big ones.
Smartass ... there will be a monolithic slab on that dirt , with foundation walls about 8 feet tall enclosing the cellar space . The kitchen will be on top of that ...
