I've recently got a new TV and I was hoping to use the old bracket, but I'velost the plates to extend the 200mm x 200mm plate to 300mm x 200mm. I've got alength of this: x 2mm thick aluminium bar.If I secured the bar to the bracket plate with 2 bolts, and fixed to the TVwith 1 bolt at each of the 4 points, would that do the job? The new TV's about15kg, and the bracket is rated to 40kg.

I would go for mild steel or stainless steel rather than aluminium.

It'll be fine, for the 50mm overhang you have either side and the relatively light weight, 2mm ali will do the job no bother.
