model shops usually have 1 foot squares or 1 foot by 3 foot that some
will cut down for you, 0.5mm to about 10mm are the usual sizes, and you
used to have a model shop next to B&Q down the London road and I believe

Yes it is available, but only usually by special order, and even then, only
usually in 8ft by 4ft sheets.
Any particular reason why it has to be birch? - once you've discounted this,
finding the size will be easy - most sheds will have offcuts fairly cheap.
Birch may be a problem, but phone / cycle around your local wood merchants
and ask if they have offcuts.
Glaziers may also have offcuts from boarding up, but probably not that
