Just had a new one put in and have a few questions.
1) Should their be the little gaps for air between some of the bricks in the dwarf wall?2) Given it is winter, what is the best way to dry it out (keeping the door open between the conservatory and the house?) and how long should it take (days? Weeks)?
There was a few days of rain after the dwarf wall was put in and before the roof was put on.
Any comments appreciated.

If the gaps are on the external leaf just above the dpc, then that should be okay, but if they are in the inner leaf, I don't think so.
If the drawf wall is rendered and plastered internally it's best to let it dry out slowly, as this will reduce cracking in the plaster work, just leave a window in the conservatory open an inch or two and let it dry out over a few weeks Leave the door between the conservatory and the rest of the house closed. Obviously it is going to take longer to dry out this time of year than in the summer.

A cavity wall is not required for the dwarf wall.
The wall and floor slab will take a good few weeks to dry out. You should open a window and let the area dry off naturally, opening the door the house will help, but the moisture need to get out of the house via ventilation too.
