cutting out a worktop for belfast sink

whats the best way to cut the lump out of the worktop to fit round a belfast sink, its a solid beech worktop

A decent router able to take a 12.7mm straight bit.

If you don't have one already, take a look at products like the Freud

2000 - about £160. Don't bother with the cheap, sub £100 ones.

You can either use a straight edge clamped to the worktop or better still, make a jig and clamp that to the worktop. Run the router against the straight edges taking cuts of no more than 8-10mm or so.

Finally, you can fit a rounding over bit and put a gentle curve on the top edge.

It's worth buying a scrap of chipboard or chipboard worktop to practice on first.

Or if you're near an IKEA, you will probably find a piece of damaged solid worktop (likely even beach) going cheap in their damaged section.
