I'm being told that high-end smooth top electric ranges have indefinite variable controls for heating that match the accuracy of gas stoves. Is this true or did the manufactures just take the numbers off of the knobs? Also, do all smooth tops require special, (Cuisinart) cookware or just the induction type models of smooth tops?
