Fitting kitchen tap fittings

Need to replace kitchen tap - a monobloc. Bought a new one, and 2 flexis to match:

A couple of questions:

  1. Why are they not identical? Does the one on the left have flow restricter to reduce pressure for the cold, assuming it comes off the mains? Can't understand why they are not the same...

Also, how do I know where to attach the hot and the cold on the tap? Nothing mentioned in the leaflet it came with. There are markings on the tap indicating which side to turn for hot and which side for cold.

It's not a flow restrictor. It's intended to make sure you have 1 & not 2 nuts +crimps at the same height within the thickness of the worktop.

Set to fully hot or fully cold & blow through it to ID the pipes.

That makes sense, although in the instructions they insist that you only tighten by hand.
