Rockwool batts, compressibility.

50mm batts in a 45mm space, plsterboard over, possible?

Mine has plenty of "give" in it, but can't remember which of the RW3/RW45/RW5 grades I have, ISTR one of them is a lot more solid

Possible but the plasterboard is quite likely to bulge out in the middle as time progresses and crack any skim layer that you put on top.

It really depends a lot on how compressible the rockwool bat is. Mine has ripples about 3mm deep either side so you might get away with it.
