i've been googling for ages but cannot find a mains transformer that could run a 250 Watt 24 Volt halogen bulb. It's for an 1950s slide projector.
Any thoughts were to look, or why such beasts only seem to go up to 60 Watts?

You must have been looking for the wrong spec.
250 VA 0-12 0-12 transformers are a stock item with most electronics suppliers - Farnell, RS etc. You series the secondary windings to get the 24 volts.
