The ends of some joists are rotten where they've been touching a damp wall, the rot is no more than a cm or so into the joist, how far back should the timber be cut back, if at all?

1 metre back for dry rot from the merest trace. Treat before cutting and then the end grain. I'm not even sure it is necessary for wet rot. Just cut it back as far as you can and treat it and then wait for the worst to happen. If it doesn't happen OK. If it does, treat as per dry rot.
Which actually means the whole joist of course !!!
