I'm having a brick column support re-instated and an additional purlin bolted to the existing one.
One builder just wants to leave the roof sag alone - another suggests jacking up to straighten it all out.
Any views?

I'd leave it alone, but correct the support (ie give it some where it lies).
Moving things that have settled is likely to cause you problems...
That's my feeling. The sag is long standing so the purlin and the rafters now have a new shape which I suspect that even if jacked up they would try and re-acquire. Funny thing is the other (mirror) part of the roof and that purlin are fine - though they will get the same treatment anyway.
