In theory any kind of solids in the septic tank would contribute to sludge buildup which will lead to having it pumped more often. But I don't believe coffee is the worst offender. Our diet contains a lot of fats and oils that contribute to the buildup even more by gluing parts of you know what together and clogging the pipes. And just how much coffee do you drink, anyhow? Is three-six spoons going to make much difference compared to all the rest that goes in there daily? Any more coffee than that would probably damage your cardiovascular system (allegedly :) ) before damaging the septic system in your house.

And on top of all that, nothing prevents you would dumping most of the ground coffee from the filter into the trash and just flushing the little that's left? If you brew in a French press or prefer Turkish coffee, dump the grinds waste onto a paper towel and then flush only what's left.

Bon Appétit!
