I would drill the sink only if I were absolutely, positively sure there's not a single supplier anywhere on the WorldWideWeb that can supply the faucet I need. 6" centers faucets are not as common as 8" but they are being sold. Here is just one that came up:

Are they the best looking faucets in the whole world? Well, maybe not, but drilling the sink, though possible, is a tough job, especially if you do it for the first time. You would need a 1-1/8" - 1-3/8" diamond core bit which by itself will set you back $100 or just about. The process itself is simple but carrying it out may not be so. The hole is rather hard to start because such a large drill bit tends to wander (a lot). You need to stick a piece of a wide masking tape (2" wide blue tape will do) and you need to mark the outline of the hole because these bits don't have a pilot bit. Then you need to pour some water on the tape and start while it's wet and then keep it wet while drilling. Go slowly and keep pouring water on the bit and eventually you'll drill through.

Also consider that the faucet you chose may need a third hole in the center, and then you'd have to drill both left and right holes else the center hole will not be in the actual center. You may also want to do it for aesthetics anyhow else the faucet will not be centered in the sink. This kind of drilling will be impossible because you would need to have two 1-1/4" holes with centers only 1" apart. In other words, the new holed and the old will have to overlap. I can imagine that with an incredibly steady hand and going very very slowly, you may be able to do it, but it will be a challenge which will make spending an hour online searching for the right 6" faucet feel like a walk in a park.

In conclusion: drilling the sink is possible, but I strongly advise you to explore other options first.

Look closely at your kitchen sink. Never go shopping without first checking your sink. Check under the cabinet to determine how many holes the faucet uses. For example, some sinks use only one hole, while others use four. You must choose a kitchen faucet that matches this configuration or it won’t fit your sink.
