The easiest way to implement this is to put a 4" box in the place where the 3 wire terminates, use 2 GFCI receptacles there and split out the rest of them from there on the "load" terminals.

Under American code, again you are OK. Not allowed undar Canadian code. If I need to extend a neutral, I can get away with a wire nut, but the inspector won't allow 3 wires in the nut. If the breaker is approved for 2 wires, it's OK. Another case of Canadian code being more stringent than US.
No, but I do know of cases where a fire was caused by "illegal activity" where the insurance company won a judgement against the insured or the insured's family. Kid making canabis oil in the basement with butane blew the house up. The insurance company paid out $400,000 - then won a judgement for $400,000 plus costs when the kid was charged and convicted.
Which would have required opening up the finished basement ceiling and pulling the cabinets - which have an integrated counter-top/backsplash. That was NOT going to happen (would have been over $10,000 of work by the time it was done - all custom ash cabinetry.
I suppose that is the flaw in the logic of your "split wired" receptacles in the kitchen. When I remodeled my kitchen I went with 4" boxes on the counter top and have a duplex from the 2 new 20a circuits in each. You can never have too many receptacles serving the counter it seems. I have another
20a circuit feeding the counter on the other side and one 15a that was existing feeding the end of the peninsula. It really just gets used for charging phones and the switches feeding the overhead lights. To be totally legal I should have abandoned the 15a receptacle but it was too convenient for phones to do it. I have the receptacle with 2 USB ports and two 5-15s. (come and get me copper!)
I don't see why you can't use two gfci receptacles,one on each leg, protect ing all the receptacles. It's only if you run the shared neutral to all the receptacles, split them like you propose that you can't use gfci receptacl es. Go from panel, to two gfci, then to two separate runs of downstream rec eptacles and it works.

My house (built about 1969) has a strange combination, where the receptacle behind the refrigerator in not quite on a dedicated circuit but shares it with the bathroom light. The bathroom is not right next to the kitchen but is between electrical panel and kitchen, so it was easy for the electrician to do that.
