I have a 30amp 240 volt outside AC disconnect that needs to be replaced. Its 30 years old. I can't find one to buy. But I can find a 60amp 240 v disconnect. Can I use that or does it have to stay at 30amps?

Yes, is is fused elsewhere so is properly protected. There are 30A available if you want.
Fusible or non-fusible?
Not that it really matters since both styles are readily available.
How is that you are able to find 60A versions but not 30A? We are able to find both versions via simple Google searches.
If the existing one is fused, then it may not be code compliant to replace it with a higher amp one, even though it has another breaker at the panel. Could be that it was called out in the installation instructions. If it's not fused, then there is no problem with using a higher amp one. But 30A fused should be readily available.
There are also non-fused fisconnects available made for that purpose
US? Does the spec plate say "Maximum fuse size"? Then you need fuses at the disconnect or panel (not likely). What does the plate say is the maximum overcurrent/fuse size?
