I already have one striplight in the garage. I was wondering if its OK to wire another one off of it?
Also how hard would it be to make it so each light was individually switched on a 2 gang?

With electrics, I always say, if you have to ask then you shouldn't be attempting the job!
If you can give more details, like what cables go where at present, it might be possible to give you some pointers. If the garage wiring is all run on the surface, it should be easy to work out.
Wiring another light off an existing one should be straightforward. But still needs to be done right and how it is done will depend on how the exisitng wiring has been done.
Incorporating a 2 gang switch could actually be easier than just wiring off the existing fitting or could be a lot more complicated. It depends again on how the existing system has been wired.
The usual caveats about how dangerous electricity is apply and that you need to be totally confident and competent about what you are doing. Think of it as jumping out of a plane with a parachute and /hoping/ you packed it properly..
