What are the recommended ways to stick vinyl bathroom flooring down onto concrete? Doesnt the knobbly conrete damage the vinyl?

You should really run some selef levelling compund over to get a smooth surface.
After that, its up to you whether to glue or not.
I'd guess an impact adhesive would work as well as anything.
