"Seasoned" can mean pretty much anything you like. You should be looking for a moisture content of 10-12% for anything to be used indoors. Softwood is very rarely below 15%, unless it's in a laminated board form. IIRC American hardwoods like oak, ash, cherry are pretty reliable, and are used by the big kitchen manufacturers.
