I suspect I may have figured out the big reason: cupping. Imagine cupping on a wood floor with boards glued side to side and not fixed down ha

I reckon that may be the main reason but also, maybe, different boards would have different expansion/contraction characteristics? Because of differences between pieces of wood the joints might be stressed along a row and pull apart?
