James,

A straight answer to straight questions - yes, it can be done *AND* your roof will fall down thus giving you and any other occupants some very sore heads. Please take this seriously.

The reason - the bits that you want to take out are actually designed to distribute the load of the roof down to the wallplates and/or structural walls and ultimately to ground level so remove them at your peril!

Your ceiling would sag, and the rafters, probably enough to cause failure. The strut down from the apex in the first drawing holds up the ceiling joists with the other strut propping the rafters up from this fixed point on the ceiling joists. The truss is /only/ composed of triangles, a structurally advantageous configuration.

The other frame /may/ work with vastly larger depth (&or strengthened with steel) rafters and ceiling joists, calculations would need to be done.

It can be done, but will be quite a serious operation. The joists and rafters may need strengthening, depending on their current sizes. Purlins will have to be added where you have shown the top of the vertical studs. You may need to incorporate a ridge board or beam. You will need a structural engineer to spec out the sizes and it will all have to go through building control.

When you get the structural engineer in, specify that you want the joists to be to full habitable spec. Then you can convert the attic to a proper habitable room in the future. You could even get them to specify modifications for roof lights whilst you're there.
