Would like to take down a bearing wall to expand a kitchen, but the problem is the house has balloon frame construction. The wall is about 14 feet long and has 2 door openings in it already. Ceiling height is about 12'.

Short answer would be - get a structural engineer. Longer answer would be - there is enough headroom to replace the wall with a beam / plywood box / truss to take any imposed loads, replace any bracing / sheer wall functions.
