How can i build a wooden horse?

How can I build a wooden horse, I mean a really big horse and how can I make it firewallproof and critter-proof?

I used to watch some guys carving carousel horses at a park in Los Gatos, California as they refurbished an old carousel. They basically built up a bunch of blocks onto a skeleton for the rough shape and then carved away.

Just one. From the blurb hawking that video, it sounds like I'll be able to carve a horse just like the master carver's immediately after watching the video, or maybe even during it. If it's so easy, what's the big deal about being a master carver? ;)
