It builds in some pre-stress.

No, it doesn't.

When you remove the support under the centre the beam will sag ever-so-slightly under its own weight, then more when it's loaded. If you want to pre-stress it you should load it before the cement is completely set.

That's why in pre-stressed concrete the reinforcing bars are put under tension.
