I've built a garden wall and it's turned out ok. However I have to do some pointing. I've been advised to use an angle grinder to reduce the mortar to a depth of at least 15mm from the face of the brickwork. I would appreciate any useful tips and hints to get the correct depth and avoid messing up the brick faces.

Hold it really firmly :-) You can rest the end of the disk guard against the wall to steady it and control the depth of cut. You might find it better to cut a groove down the middle of the mortar then chip out the rest with a bolster rather than trying to cut right up to the brick. Use safety spectacles, ear defenders and a dust mask.
Buy a mortar rake from Toolstation rather than using a disc on your angle grinder.
Used one for cutting the channeling for my kitchen ring main last year. Fantastic tool that was worth every penny. The only caveat is that the TCT mortar rake (~£10 IIRC) don't last very long.

Using an angle grinder with a nornal disc is a bit hit and miss - and you'll probably end up with some accidental slots in the brickwork. You may be better off with something like
