How do I insulate an angled roof(i.e. the rafters)to an enclosed side porch with eaves but no ridge vent.

Just vapor seal and then insulate the floor or ceiling of the living area. Countless places don't have soffit vents nor any kind of ridge or gable venting and have done just fine for many decades.
