I'd like a new cooker hood to be controlled from the main cooker isolator on the wall. Is it acceptable to wire it on to the cooker side of the switch? (with an FCU in between, obviously)

With some caveats, yup.
Check the breaker size. Assuming its 32A, then use a single 2.5mm^2 T&E from the switch output to the FCU, thence whatever is appropriate to the hood (usually the included flex)
