What happens to milk when you freeze it? I always used to think that only goat's milk freezes well. Maybe it's all right with the modern pasteurised, homogenised, filtered, "standardised" (i.e. watered down) stuff.

Milk freezes perfectly well, at least the red-top stuff does. When my wife was alive we lived out in the country and it was simpler to buy several 4-pint bottles at a time and freeze them, rather than having to go shopping often. The only problem came when thawing them out, because the big bottles were thinner and sometimes split on freezing. Not a problem until they were thawed out, when they leaked. Didn't happen with 2-pint bottles. I reckoned they used the same sized gob of plastic for both sizes of bottles, so the bigger bottles end up thinner.
