Have got an ikea kitchen but need a gas oven which they dont supply. I now find almost all built in ovens are 600mm wide whereas ikea carcass is 560mm wide - anyone know where i get an gas oven slim enough ?? Ikea have simply refused to answer my e-mail having not mentioned the size problem when I said i would need to get an oven elsewhere (ie; gas)
Basically, you are on your own when it comes to Ikea. However the kitchens are good value.
I'm not sure about your question though. Built in/built under ovens, gas or electric, fit into the standard 600mm carcass. If they give a dimension of say 595mm that is the front face, which sits over the front of the carcass, not the size of the part that fits into the carcass.
We bought the Stoves double gas oven, and it fits perfectly into an Ikea oven unit (well not perfectly as I had to hack chunks out to accommodate the gas pipe, but close enough)

I know of at least 3 people that have bought Ikea kitchens and sourced their own ovens - they have all fitted straight in without problem - the ikea oven units are standard 600mm units, and I imagine that most ovens (if not all) will fit.

As the OPs say, I would expect a standard oven to fit. My Neff is 550mm wide where it goes in the housing.. A 600mm carcase made of 18mm chipboard still gives you over 560 internally.
