garage/shop wiring question

I'm purchasing a house with an attached garage, and will be adding a subpanel for use as a shop. The garage is already insulated and drywalled, so I'll be running conduit (most likely EMT).

Shop Built Drum Sander

Question about insulating shop

I recently built a new garage/shop. Being in northern Illinois, it occasionally gets cold here in the winter, so I'm going to insulate it. There is a second floor with an area that if I built a 3 foot knee wall would be about 15'x19'.

Wiring a new shop

I am in the process of designing and building a new 30'x30' shop. A few questions concerning wiring have come up that I would like some input. I have read a lot of the posts about wiring but still confused on a few things. The shop will be 30x30 with 10' ceilings, concrete floor.
