Am trying to take apart a wooden swing set. Put together with carriage bolts and tee nuts. How do I remove the rounded bolts.... nothing to grip onto.

That doesn't sound possible. So, I'd say they're actually Security Bolts. Those, are only very slightly oval and require a special bit to install and remove them.
- Conversely, you can grind a slot into the head for a flat-head screwdriver or you can drill a hole in the center to then drill them out with a Screw-Out reverse threaded drill bit set.
