Broadly speaking, how does the water pressure sensor in a boiler work? I'm told there are 3 wires from it.. how might that work (i.e. it doesn't just present itself as a simple on/off switch, then)

Probably power, neutral, and a variable data signal, dependent on the pressure. That's how industrial ones are.
