What is it with Americans avoiding giving kids coffee? Or alcohol? Or letting them out after dark? Are American children somehow intolerant to everything in the real world?

The kids aren't, but the current generation of parents are making them that way. Things we did on a regular bases are now bad and parents are neglectful.
We used to travel miles from home on our bikes and now if a kid goes 2 blocks to a playground the police will be at the door after the parents. We have a generation of sissies coming up.

It's sort of like that here in the UK for a lot of parents, but it's not enforced or frowned upon so much if you don't "protect them". For example I know quite a few folk who let their kids drink wine. In France they all do. Also, although officially smacking your child is illegal, half of parents still do it. I've seen it in a supermarket, without anyone batting an eyelid. Mainly I think people are just glad the little shit stops making a noise.

Many American parents give their children quite a bit of freedom. They're not newsworthy, so you don't hear about them.
Alcohol might be the exception, given how puritanical the U.S. is (and has been) about it. As Ed said, the penalty can be quite high for nonconformance to societal norms. It's appallingly easy for Child Protective Services to become involved in an ordinary family's life.
I knew someone whose kid tripped and banged his head on the coffee table. The doctor had to report it; CPS had to investigate; the parents were afraid they'd lose their son over it. Happily, it all worked out well in the end.

Jesus Christ, in the UK doctors don't report anything like that, it would have to be something about 10 times more serious, something which looked like the parent must be beating up the child. Falling down is a natural thing all kids do many times, your CPS must be very busy.
And I think I've just sorted out a confusion I have. I always thought CPS meant child protection service. I assume that's what it is in the US. In the UK it means "Crown Prosecution Service", which applies to all people, not just kids.

Both my kids got a well deserved smack on the butt at about 4 years old. Made my point, never had to do it again. That was 45 years ago but I'd do it again in my house, not in public.

It always amused me that Americans allow their kids to drive 2 years before they allow them to have sex. In the UK it's 1 year after.

My parents might have let me drink wine but I had little desire to. That might be because the only wine on hand was a dusty bottle of Manischewitz Concord Grape they kept for anyone who was stupid enough to ask for wine. Sometimes there was cheap Chianti for Italian recipes.

My mother took a swipe at me with a paddle ball paddle. Missed me, hit the door frame, broke the paddle, and got a sliver for her trouble. That took care of that.
