When I turn my water on the pressure is great for a short time then drops until no water comes out.

I recently moved to an old farmhouse with well water. When I turn on the water the pressure is great to start then it gradually decreases until there is no water pressure at all and no running water. At this point I hear the pump cut on and about 1-1/2 to 2 minutes later I have water again. Pressure is great again then gradually diminishes to nothing and the pump cuts on again. Water runs for about 3 minutes before losing all pressure then takes about 1-1/2 to 2 minutes to return. It's almost as if the pressure tank waits until all the water is depleted in the tank, water stops and waits for tank to refill, then continues until tank is depleted again and continues this cycle.

The water itself is great; clear, very cold, no mineral taste, and no odor or debris.

I have a TopProtector 30 gallon pressure tank. After some research I thought maybe the tank was "waterlogged". I drained the tank and checked the bladder pressure with a tire gauge. The bladder pressure is at 28lbs; the sticker on the tank suggests tank pressure should be 30lbs so I think all is good there. I am going to look at the system pressure gauge tonight when there is no water demand. I assume that if I am losing pressure in the tank when there is no water demand then there must be a leak somewhere. But what if the system pressure holds?

I have no plumming experience and have never dealt with a well before. Am I on the right track? Any suggestions as to what might be going on? All advice is greatly appreciated!!!
