How should attic windows on the sloping part of the ceiling be drawn on a plan - as in the three circled windows on
I am not an architect but I would have thought you would do the same as the rest of the plan IE looking down from above

Exactly right, you should draw them as they would look if the observer was above the building and looking down e.g. a square window in a sloping roof would be drawn as a rectangle in plan view.

They are rectangular on plan, but as you are looking down, and the roof is sloping, then they are not as long as they would be if they were horizontal.
What you need to do is draw your standard first or third-angle orthographic projections (front, plan and end elevation) and then the length of the window on plan can be determined by transferring the window dimension from the end elevation view

Bugger, had to go back and get another measurement ;) So, like this:
Thing is, I've never seen a building plan with roof windows on it before.
