Does anyone know how I can find someone to fit an ikea kitchen who knows ikea kitchens?

Go down to your local Volvo garage, or Sweden. Ask there. I didn't think IKEA kitchens were complex things, why do you need a specialist?
Hopefully someone who knows there isn't a pipe space behind ikea units.

Umm, fitted several, there is, sort of, pipe space there. At plinth level. OTOH a wise man uses over sized worktops and moves the units away from the wall.
If you know the issues with them you can ask them to see their knowledge. Without that... no.

Any kitchen fitter should be able to do it. However, be aware that installation of an Ikea kitchn *should* cost you more than, say, a B&Q kitchen because of the need to build the units from flatpack and this will partially offset the savings on the units themselves. The Ikea philosophy is DIY!
The units we bought from Arena Kitchens came fully built with doors hung which reduced installation time considerably.
If you have space the 'service gap' issue is easily solved by setting the units away from the wall with battens and using a deeper worktop (though again this is likely to increase the total cost). Deeper worktops are useful anyway.
Very happy with the half a dozen IKEA kitchens I've fitted for various people. If the doors aren't available up front this is not usually a problem as they can be added on after.
In fact I keep the doors well out of the way during the main work as they can only get damaged.
Par for the course when dealing with any big concern these days. You either need to develop a fresh way of looking at things or go to a nice friendly kitchen firm and pay accordingly.
