Gas hob cooking without burner rings

Not strictly DIY, but...

I often use a curved-bottomed wok for stir frying, but the gas rings on my hob direct the flames up the sides of the wok rather than at its base where I want most of the heat. I'm often tempted to lift off the burner ring so that the gas burns straight from the ring's supply pipe and thus straight upwards.

I haven't actually done this yet, but would I be courting disaster by doing so?

I used to do just that for exactly the same reason, cold spot in the middle of the wok. The pipe with the mixed air/gas was about an inch in diameter and with the gas flat out the flame about a foot high, still only just hot enough though.

It might blow back and start burning in the pipe from the jet, it'll make rather a lot of noise if it does but just turn the gas off. This happened to me with an ancient (read late 40's early 50's cooker with hefty cast iron rings a pipes) when I was lad of about 8 making a cups of tea for Mum and Dad early one morning, scared the living daylights out of me! But no harm came to me or the cooker.

Not sure about the safety aspects of what you suggest but would the gas light /stay lit as you will have affected the gas/air mix . Could it blow back?

You can buy a wok support that is designed for sitting on a gas hob/cooker to support a wok .Would that help. Similar to thesebut I believe you can get a universal one as well .

My thoughts are that it couldn't blow back due to the lack of oxygen in the supply pipe, but I'm reluctant to put that to the test :-)

I already have one such, but it isn't a lot of help because the flames still don't touch the centre of the wok.

Ok...I remember peeking ( or should that be Peking) in to a Chinese Takeaway kitchen when the door swung open and the flame on the gas burner that the guy was stirfrying on was absolutely huuuuuge !!!

Well it worked fine on my hob but the output is still only just enough, it does cure the cold middle of the wok though.

145,000btu (42kW forty two) that's more like it. When I was in China a few years back wok cooking was done over electric fan assisted charcoal or compressed coal blocks. Think black smiths forge...
